Job Brief

The Sommelier is responsible for the wine education of all F&B service colleagues, sourcing new products and keeping up to date with offers as well as guest tastes and requirements.

DUTIES AND RESPONSIBILITIES
  • Driving Wine/Beverage revenue in the outlets and maintain cost within budget.
  • Controlling and monitoring wine orders, stock and par level.
  • Creating and maintaining up to date wine list as per Constance standards after coordination with Head Sommelier and chefs on new menu design.
  • To ensure the service of wine is carried out to Constance standard at all times.
  • To ensure the cleanliness of all wine service equipment and storage areas as per the Constance standards.
  • To ensure all mise en place is done to the correct standard and within the allotted time constraints.
  • To make sure that Company Policy and the Vision Statement are followed and utilized at all times.
  • To be aware of all other services offered in the Hotel.
  • Have complete understanding of wine list, menus, and beverage items at all times.
  • Promote, describe, and up sell items.
  • Attending to all Hotel guests’ needs as per Constance standards, while working in a safe and secure manner.
  • Ensuring effective team work and co-operation with rest of Wine and Beverage and Restaurant team.
  • To use guest’s names at all times.
  • To ensure that you attend all trainings, briefings and meetings and organize it.
  • To be fully aware of the Hotel’s fire safety procedures and Health & Safety regulations.
  • Ensures Occupational Safety & Health Act, local health and safety codes, and company safety and security policy are resected at all times.
CANDIDATE REQUIREMENTS  :
  • Diploma Hotel Management or Sommelier Diploma, a certified task and group trainer as well as hold WSET level 4 or equivalent.
  • Extensive wine and beverage knowledge and the ability to speak English or any additional language will be highly regarded.
  • Experience working in top of the range large luxury resorts of over 180 rooms with refined services for the discerning and demanding traveler.
  • A previous international exposure will be an advantage
  • Possession of superior interactive skills is essential.
